Directions

Preheat grill to medium indirect heat (300°F to 350°F). Place ribs on 3 layers of heavy-duty foil (about 18x24 inches). Sprinkle ribs with garlic and oregano, and season with salt and pepper to taste. Top with tomato, onion and (if desired) olives, and drizzle with oil and vinegar. Top with 3 more (18x24-inch) layers of heavy-duty foil. Fold edges together to make a packet; crimp to seal, leaving room for expansion.

Place rib packet on grill. Grill, covered, 2 1/2 to 3 hours or until ribs are tender (160°F). Remove from grill, open packet and serve.
