There are two ways to grill directly or indirectly. Direct grilling, where foods are placed on the grill directly over the heat source, is the most basic method. When grilling indirectly, the heat source is off to the side of where the cooking takes place. To grill indirectly using a gas grill, turn the burner on one side on and cook on the other side. Likewise, with a charcoal grill, have heated coals on one side and cook on the other side.

Barbecued Spareribs

For sauce, in a small saucepan combine tomato sauce, 1/4 cup water, brown sugar, lemon juice, Worcestershire, onion and red pepper flakes. Bring to boiling; reduce heat. Simmer, uncovered, 10 minutes, stirring once or twice. Remove from heat.

Preheat grill to medium indirect heat (300°F to 350°F). Cut ribs into 4 pieces. Season with salt and pepper to taste.

Place ribs, bone side down, on grill. Grill, covered, 1 1/2 hours to 1 3/4, hours or until tender (160°F), brushing occasionally with sauce the last 30 minutes of grilling. Heat any remaining sauce and serve with ribs.
