In a large bowl combine cabbage, onion, apples and walnuts.
For dressing, in a small bowl whisk together vinegar, cider and honey. Season with salt and pepper to taste.
Add dressing to vegetables, and toss. Sprinkle with parsley. Chill until ready to serve.
