Preparation Time: 20 minutes
Choose firm, heavy cabbage. Refrigerate sliced cabbage in a perforated plastic bag up to 6 days. To remove the core, slice the head in half and cut away the core. Cut each half into smaller wedges before shredding or chopping for use in recipes. Cook cabbage just until tender. Overcooked cabbage has a strong flavor.
In a large bowl combine cabbage, onion, apples and walnuts.
For dressing, in a small bowl whisk together vinegar, cider and honey. Season with salt and pepper to taste.
Add dressing to vegetables, and toss. Sprinkle with parsley. Chill until ready to serve.
