In very large bowl stir together hot water, sugar, and gelatin until dissolved. Stir in cold water, pineapple juice, apple juice, cranberry juice and cherry extract. Ladle into 4-cup plastic containers. Cover and freeze.
About 1 1/2 hours before serving, remove containers of juice mixture from freezer. Place frozen chunks in large punch bowl. As mixture softens, break apart with spoon until slushy. Just before serving, pour ginger ale or lemon-lime carbonated beverage over slushy mixture and stir.
If desired, add slices of lemon or lime to punch bowl.
