Apricot-Walnut Stuffing

Preheat oven to 350°F. Coat a 2-quart baking dish with nonstick cooking spray. Heat oil in a large nonstick skillet over medium heat; add onion, carrot and celery. Cook, stirring often, 8 minutes or until tender. Add broth, apricots, thyme and pepper; bring to boiling.

Remove from heat. Add stuffing mix, walnuts and parsley; mix well. Spoon into baking dish. Bake 30 minutes or until top is lightly browned.
