Barley with Corn and Peppers

In 2-quart saucepan, cook barley to desired doneness as directed on package, adding bell peppers during last 2 minutes of cook time. Drain; return to saucepan.

Meanwhile, microwave corn and sauce as directed on box. Remove from pouch to barley mixture in saucepan.

Stir in onions, basil and pepper. Cook 1 to 2 minutes or until hot.

Barley is a wheat-free grain that contains protein, fiber, B vitamins and several minerals. Quick-cooking barley doesn't require presoaking and, as its name implies, is quick to cook.
