Cook rice according to package directions; set aside.
In a wok or large skillet, heat oil over medium-high heat. Add garlic and ginger, cook 30 seconds. Add pork a few chunks at a time; cook, stirring frequently, until browned.
Add green onions, rice and soy sauce; stir to mix well. Cook just until heated through; serve immediately.
