Cook rice according to package directions using apple juice instead of water.
Heat oil in a medium skillet over medium heat. Sauté apples, onions, celery, raisins and poultry seasoning for 5 minutes or until vegetables are tender.
Stir in rice and almonds. Season with salt and pepper, if desired.
