English cucumbers are thinner and longer than regular cucumbers. They're also nearly seedless. Choose firm, unblemished cucumbers. Refrigerate, unwashed, in a plastic bag for up to 1 week.

Cucumber Dip

Combine cream cheese, mayonnaise, cucumbers, onions, lemon juice, dill, hot sauce and pepper in a medium bowl. Stir to mix well.

Cover and refrigerate dip 15 to 30 minutes, or until ready to serve. Place in a serving bowl and serve with fresh vegetables and assorted crackers for dipping.
