In a large skillet cook bacon until crisp. Remove bacon, crumble, and set aside. Reserve 2 tablespoons drippings in skillet.
For dressing, in a small bowl whisk together lemon juice, sugar, vinegar, mustard, and salt and pepper to taste. Set aside.
Add spinach, mushrooms and shallots to drippings in skillet. Cook, stirring gently, until spinach begins to wilt. Pour dressing over spinach, and toss. Place on individual plates, top with bacon crumbles and egg slices, and serve immediately.
