For marinade, in a large bowl whisk together cider, vinegar, soy sauce, honey, sugar, mustard, poultry seasoning and peppercorns.
Place turkey in a large resealable plastic bag; add marinade. Seal bag; turn to coat. Refrigerate 8 hours or overnight.
Remove turkey from marinade; reserve marinade. Place turkey on a rack in a roasting pan. Pour marinade over turkey and cover loosely with foil.
Roast 1 hour. Remove foil; add apples and broth to pan. Roast uncovered, basting frequently, 1 hour more or until an instant-read thermometer registers 165°F. Remove from oven and let stand 15 minutes before carving.
