In a large food processor combine pistachios, almonds, figs, raisins, cardamom and allspice; pulse until coarsely chopped
Add pears and bananas; pulse until coarsely chopped. Add orange zest, 2 tablespoons vinegar, 1/2 cup pomegranate juice and 1/2 cup wine; pulse until a coarse paste forms, adding more vinegar, juice or wine to taste. Season with freshly ground pepper to taste.
Transfer to a serving bowl. Serve immediately, or cover and refrigerate until ready to serve.
