These tasty fruit bars are naturally low in calories, typically less than 50 calories. In selecting a fresh pineapple, choose one that is plump and fresh-looking. Fresh, deep-green leaves are a good sign. Contrary to popular belief, the ease with which the leaves pull out is not a sign of ripeness. If underripe, store at room temperature for up to 2 days. Pineapple can be prepared in a variety of ways. The most common is to cut a thick slice from the top and bottom, then pare from the top downward. Next, remove the eyes by cutting diagonal grooves. Finally, cut into quarters or eighths and remove the core section from each.

Strawberry-Pineapple Frozen Bars

Place pineapple and strawberries in a blender. Pulse to purée; add 1 or 2 tablespoons water if needed. Add sugar, if desired, and lemon juice; blend.

Pour fruit mixture into bar molds or small cups and insert sticks. Freeze until solid.
