Combine cantaloupe and lemonade concentrate in a food processor; process until smooth. Sweeten to taste with powdered sugar, if desired.
Pour cantaloupe mixture into an 11x7-inch glass baking dish. Freeze 30 minutes. Remove from freezer; stir. Return to freezer; freeze 30 minutes more. Remove and scrape frozen mixture with a fork. Return to freezer. Repeat freeze/scrape process until ice is slushy but not completely frozen, about 3 to 4 hours.
Spoon ice into bowls or chilled dishes. Top with coconut and mint, if desired, and serve immediately.
