This hearty southwest-style stew makes a tasty winter entrée.

Beef Chile Stew

In a 6-quart Dutch oven, cook bacon until crisp. Drain on paper towels; crumble and set aside.

In same skillet, brown steak, onion and garlic in bacon drippings. Add potatoes, tomatoes, 4 cups water, chiles, chili powder, cumin, black pepper and oregano. Cook over low heat 1 hour or until potatoes are tender. Serve over rice (if desired) and top with crumbled bacon.
