Beef and Barley Stew

In a large heavy pot, heat oil over medium-high heat. Add stew meat and cook until browned. Drain fat.

Stir in mushroom soup, garlic, and salt and pepper to taste. Stir in 6 cups water. Bring to boiling; reduce heat. Simmer, covered, 30 minutes.

Stir in barley. Bring to boiling; reduce heat. Simmer, covered, 40 to 50 minutes or until beef and barley are tender, stirring occasionally.

Stir in peas and corn; heat through. To serve, ladle stew into serving bowls and sprinkle with tomato and green onion.
