Preheat oven to 400°F. Place sausages in a shallow baking pan. Bake 20 minutes or until instant-read thermometer registers 165°F, turning once. When cool enough to handle, cut each sausage in half lengthwise; set aside.
In a large saucepan combine sauce and cooked sausage; bring to boiling. Reduce heat and simmer, uncovered, 5 minutes. Add bell peppers, onion, tomatoes and seasoning. Simmer, uncovered, 10 to 15 minutes or until peppers and onion are tender, stirring occasionally.
For each sub, place 2 pieces of sausage on the bottom half of a roll. Top with some of the peppers and onions. Spoon sauce on top, sprinkle with cheese, and top with the top half of the roll. Serve immediately.
