Preheat grill to medium-high (350°°F to 400°F). Place bread on grill; toast one side 30 seconds or until grill marks appear. Remove bread from grill.
Spread 2 tablespoons of the herbed cheese on the grilled side of each half-slice. Top 6 half-slices with tomato, onion, avocado and sprouts. Sprinkle evenly with provolone and season with salt and pepper to taste. Top each sandwich with 1 half-slice.
Place sandwiches on grill. Grill, covered, over indirect heat 3 to 5 minutes or just until cheese melts. Serve immediately.
