Choose deep green, heavy artichokes. Their leaves should squeak when pressed together. Store unwashed in a plastic bag in the refrigerator for up to 4 days. Rinse thoroughly. With a sharp knife, cut off the stem near the base. Cut off the top quarter of the artichoke.

Steamed Artichokes

For dip, combine mayonnaise, sour cream, chives, mint, lemon juice and pepper in a medium bowl. Divide into 4 small bowls.

Place 1 inch of water in a stainless steel pot with a tight lid. Place artichokes, stem side up, in pot. Steam artichokes, covered, 30 to 40 minutes. Artichokes are done when stems are tender: test by inserting a toothpick into the stem.

Drain artichokes, stem side up; let cool. Serve on plates large enough to accommodate 1 artichoke and a bowl of dip.
