Preheat oven to 325°F. Lightly grease a shallow 2-quart baking dish; set aside. Cook sausage in a large skillet over medium heat; transfer sausage to a very large bowl; set aside.
Melt butter in same skillet. Add mushrooms, onion and celery; cook 4 minutes, stirring occasionally. Add apple; cook, stirring constantly, 2 minutes. Add mushroom mixture to sausage mixture. Add stuffing mixes and (if desired) walnuts to bowl; toss. Add broth and egg; toss well.
Spoon into baking dish. Bake, covered, 20 minutes. Remove cover; bake 25 to 30 minutes more or until an instant-read thermometer inserted in the center registers 165°F.
