This is a refreshing salad for any time of the year. But, it is particularly in season for Hispanic Heritage month, because it echoes the colors of the Mexican flag: green, white, and red.

Avocado and Celery Salad

In a large bowl combine oil, mayonnaise, mustard, lemon juice, and salt to taste. Whisk vigorously.

Add celery, onion and bell pepper. Mix well. Add avocado; toss gently to mix. Season with black pepper to taste, and serve.
