Garlic is touted as an important ingredient in the fight against heart disease. Choose plump, compact bulbs with no damp or soft spots. If bulbs feel light, they are dried out. Store in a cool, dry, dark place. Peel off the loose skin. Peel the cloves back and snap them off. For chopped garlic, mash each clove with the back of a knife; this makes it easy to remove the skin for chopping.

Whole Roasted Garlic

Preheat oven to 425°F. Remove the loose outer skin of each garlic bulb. Cut off the top quarter of each bulb, leaving the rest of the bulb intact.

Place garlic bulbs, cut side up, on a baking dish. Brush or drizzle each bulb with butter, then with oil. Season with salt and pepper to taste.

Cover the baking dish with foil and bake 30 minutes or until garlic cloves are tender.

Squeeze the roasted garlic cloves out of the skins. Serve as a spread with bread slices; top with tomatoes and basil, if desired.
